Valentine’s Day Charcuterie and Cider pairings

Salami Rose

  • Items Needed – 

    • Wine glass with a narrow top

    • At least 10 thinly sliced pieces salami

  • Instructions – 

    • Fold one piece of salami at a time over the edge of the wine glass

    • Keep as close to half of each piece on the inside, and outside of the glass for best results

    • Overlap the next piece of salami by ½ piece, and continue placing pieces around the rim of the glass

    • As you continue, it will become more difficult to press the salami towards the center of the glass, which is the goal

    • Once you have placed all your salami around the edge of the wine glass, hold it in place, and flip over the glass onto your serve board

    • Slowly remove the glass and reveal your rose

Red Beet Hummus

  • Items Needed – 

    • Food processor, can opener, utility or chef knife, measuring utensils

    • 1 roasted beet, peeled, and chopped

    • 1, 15oz can chickpeas – aquafaba reserved for later

    • ½ C tahini

    • ½ C Lemon Juice

    • 2 Cloves garlic chopped

    • 3 Tbsp Olive Oil

    • 1 tsp Cumin, or more to taste

    • 1 tsp kosher salt

    • ¼ tsp black pepper

    • Additional fresh herbs as desired

    • Goat cheese crumbles for garnish

  • Instructions – 

    • Roast, peel and chop one beet

    • Chop garlic, and juice lemons

    • Combine all ingredients in a food processor

    • Mix until all ingredients are incorporated

    • Taste for seasoning, and add reserved aquafaba as needed to achieve desired thickness

    • Remove from food processor and place in a serve bowl

    • Top with goat cheese crumbles, fresh herbs, or microgreens for garnish

Baked Brie with honey

  • Items Needed – 

    • Oven, or toaster oven

    • 1 wheel brie

    • 2-3 Tbsp honey

    • 1-2 Tbsp sliced almonds, or chopped pistachios

  • Instructions – 

    • Preheat oven to 350 degrees Fahrenheit

    • Place your wheel of brie on an oven safe tray, along side your choice of nuts

    • Bake for 5-7 minutes or until brie is soft and melted internally

    • Transfer the brie to your serving tray and drizzle with honey

    • Sprinkle toasted nuts on top for serving

Chocolate covered strawberries

  • Items Needed – 

    • Saucepan and metal mixing bowl

    • Rubber spatula and skewers or toothpicks

    • Tray for cooling

    • Whole strawberries

    • 1 Cup semisweet chocolate chips or melting wafers

  • Instructions – 

    • Melt 1 Cup chocolate chips in a double boiler

    • Keep warm for dipping

    • Dip skewered strawberries into melted chocolate and set aside on a cooling tray to allow chocolate to solidify

    • Keep strawberries refrigerated until ready for serving

Building your board

  • Arrange your salami rose, baked brie, hummus and strawberries around your serving board

  • Add your favorite fresh vegetables, dried fruit, jam, nuts, additional cheese, bread and crackers spread around center pieces on your board

  • Remember, less is more when it comes to charcuterie
